I don’t know about you, but for me lunch is one of the hardest times of my day. I’ve got two growing boys who love to eat (and one currently content on booby juice). And my lack of lunch-food inspiration hasn’t been a big hit at our house. Neither has the unending cycle of PB&J and mac-n-cheese.
Growing up I was pretty happy with a bowl of condensed vegetable soup and a handful of crackers. Heck, I still would be happy with that, except I’d also feel a little guilty, too. Have you ever read a soup label? The sodium in that stuff is insane!
So my struggle is part lack of inspiration and part setting limitations on unhealthy stuff. And I can’t forget to mention that my boys can be pretty picky when they want to. Of course they have no problem when my hubby’s mom feed them waffles and cheese (she’s not from here, please don’t make me explain) but if I throw an ordinary piece of tomato at them they run away screaming.

We do eat a lot of canned soup, but I get the "premium" kind that actually has vegetables and meat in it and they taste pretty good. My son loves it and it comes in low sodium too.
Otherwise, we usually eat leftovers.

I just love Tuna. My oldest loves Tuna and my youngest (4) loves it too. My my two middle kids (12,10) hate it! So when i make Tuna they make themselves a turkey or PB&J sandwich.
